The brine used in one fermentation batch can be reused for the next, leading to significant savings in salt and water. However, proper monitoring of the brine water is crucial. If the biological activity is acceptable and safe for human health, the brine water should be reused; otherwise, it must be discarded. By reusing brine water, food processing industries that require fermentation can achieve substantial financial savings due to reduced salt and water consumption. Additionally, it decreases the amount of water waste the industry generates, lowering the cost associated with wastewater treatment.
For instance, a case study revealed a potential savings of 213,000 pounds of salt and 214,500 gallons of water, equivalent to $21,300 annually in a pickling plant.
